Tempura Batter

Nobu’s tempura batter recipe is simple and straight forward. Not just reserved for prawns and vegetables, Japanese style, this would even be good for traditional British fish and chips.

Add the egg yolk to the iced water and mix well. Stir in the flour until just combined. The batter should not be smooth but a little lumpy. (Potato flour may be added for extra crispiness.)
