Sauce Robert

Sauce Robert is a mustard brown sauce. It is used for roasts, braised pork, pork chops, boiled beef, broiled chicken, turkey or any hot meat leftovers. This sauce is derived from a basic brown sauce.

  1. Sauté the onions until fragrant, then add wine and reduce by 2/3
  2. Add the Demi Glace and simmer for 10 minutes
  3. Strain, and add mustard
  4. Add sugar and lemon juice
  5. Finish with butter
